The Joy of Cooking Your Special Recipe
One of my favorite times of the year is Thanksgiving. I usually volunteer to make the entire dinner because it’s such a joyful experience to create and share.
I often get asked, how do you make your turkey so moist and flavorful?
Here’s my secret. It’s in my brining process a couple of days before our dinner. I add these ingredients together, bring it to a boil. Then I let it cool and add ice. Then the turkey goes into this ice brine bath. I will save some brine to the side so that when I add more ice later I can add more brine so it doesn’t get diluted.
This the the first step. The second is my special lemon herbed garlic butter. I’ll share that in a separate post.
Even though this is a labor intensive process. The joyful smiles around the dining table is totally worth it.
